Masala Dosa

Ingredients

a) Rice- 1 glass
b) Urad Dhal- ¼ glass
c) Boiled Rice (Optional)- 1/8 glass
d) Thur Dhal – 1 handful
e) Chane dhal – 1 handful
f) Fenugreek seeds – 1 tbsp
g) Salt – As per taste
h) Oil / Ghee

Method of Preparation

Soak Rice and fenugreek seeds & then Urad dhal thur dhal, Chanedhal in a separate vessel for about 2 hrs. Then grind the Urad dhal mixture to a fine smooth batter and later grind rice. Add salt and sufficient water to make a batter of flowing consistency. Let it ferment for about 8 hrs. Then heat the dosa pan, smear oil and remove thin dosas, pour oil/ ghee on the border of the dosa, and round. Let it roast properly. Then add 1tbsp Potato Bhaji and fold the dosa to half and serve hot with chutney

Preparation of Bhaji

Ingredients

a) Potato – 4
b) Onion – 2-3
c) Green chilly – 5-6
d) Urad Dhal – 1tbsp
e) Mustard seed – 1 tbsp
f) Curry leaves – 1 tbsp
g) Oil – 2 tbsp
h) Salt – as per taste
i) Turmeric Powder – 1 tbsp

Method of Preparation

Cook the potatoes, peel off the skin. Cut it into small square pieces and keep aside. In a deep-bottomed pan, add oil then Mustard seeds. When it splutters add Urad dhal, Curry leaves, fry a little. Then add finely chopped green chillies and onion pieces. Let it roast a bit. Then add little water and allow it to cook. Then add turmeric powder, salt and the cooked potato and mix properly.
